Bill’s Award Winning 3-Bean Chili

2 ½ lbs. of lean ground beef

1 medium Vidalia onion, chopped

1 medium green pepper, chopped

2 seeded jalapeno peppers, chopped

2 cups tomato juice

2 cans (14.5 oz) diced tomatoes, undrained

1 can (6 oz) tomato paste (with 2 cans of water)

2 cans (16 oz) dark red kidney beans, undrained

2 cans (16 oz) pinto beans, undrained

2 cans (16 oz) black beans, undrained

2 envelopes of chili seasoning mix

1 tsp cinnamon/sugar mixture (or just cinnamon) less if desired

6-8 drops hot sauce

 

Break up and lightly brown ground beef on medium heat.  Add onion, green pepper and jalapeno.  Cook until tender.  Add all remaining ingredients.  Cover and bring to a boil.   Reduce heat to medium-low, simmer 20-30 minutes, stirring occasionally.  Great with scoopable tortilla chips. 

 

Serves 12-14  ( 1 1/2 cups each)

 

**Joy’s Note-This was yummy!  I ate three bowls.  Bill served it at a party at West Harbor Yacht Club during an Ohio State Football Game.  Everyone loved it.  It won the chili cook off in 2008.
