Mozzarella, Tomato Salad with Cucumber and Onion
12 oz. Fresh mozzarella sliced
4-5 fresh tomatoes, sliced thin
¾ English Cucumber sliced thin
¼ c red onion sliced thin
In a serving plate start with mozzarella, then
tomato, cucumber and just a little onion and repeat until plate is full
Dressing:
¼ c olive oil
¼ c red wine vinegar
2 cloves of garlic minced
½ t. salt and ½ t pepper
fresh minced basil or I like to use a generous
teaspoon of Gourmet Garden Basil Herb Blend. Found in the veggie section
of the grocery store.
Mix all the above dressing ingredients and pour over
salad about 1 to 2 hours before serving. Refrigerate.
